Do you know where to buy salmon in bulk? How do you cook your salmon? (and have like crispy skin at the same time lol)

The warehouse called Fassler's over at Woodlands Industrial Estate has really huge salmon steaks for sale, and you can purchase in bulk. Prices are pretty decent too! For the same price you'll get a tiny fillet down at the supermarket.
I cook the same way Gordon Ramsay does it. The skin is scored with a knife, seasoned with salt and pepper, then cooked on medium-high heat until it turns a nice brown. I don't count the time, and go simply by sight and feel.
Then I turn it over on the meat, drop the heat to medium, let cook up till about 2/3rds of the way then a quick angle on the pan to cook the bum of the fillet.
Sometimes I turn it back on the skin, turn off the heat, and let it sit for a while. Perfect salmon steak all the time.
The key to crispiness, I think, is the initial higher heat. You gotta let it chao-tar just a VERY slight bit. Same thing with beef steak.
