If the substance of the eucharistic words recorded in the Gospels and Paul is historical, then how could Jesus have ever commanded his disciples to eat his body and drink his blood—even if he only meant it symbolically? In a word, how does one reconcile the Jewish Jesus and the eucharistic Jesus?

It's important to note that blood represents life so he could just be saying to live our lives the way he desires and the word for flesh used here is "basar" which has the root meaning "to bear news or tidings" so when we connect the two we can see that he probably means to accept him into your lives and deliver the gospel to others under his guidance

We should definitely be careful but many things that aren't in the Bible can be used for Gods glory

A lot of people think that Heaven will simply be an extension which isn't so. It will be familiar in some ways but in no bad ways. We need to pray for God to reveal the truths of eternity to is, then we'll that everything we go through will be worth it.
